There’s a lot of beauty and holiday cheer coming to Madison-area stages this weekend — and next week as well:
“The Nutcracker”: Madison Ballet presents the Tchaikovsky classic, accompanied by the Wisconsin Chamber Orchestra, Friday through Dec. 24 in Overture Hall, Overture Center for the Arts, 201 State St. Performances this weekend at 7 p.m. Friday, 1 p.m. and 6 p.m. Saturday and Sunday. - .5 ounce lemon juice
- 2.5 ounces chamomile tea concentrate (see note)
- 1.25 ounce spiced honey (see note)
- Orange expression
Combine all ingredients in shaker tin, shake until chilled, serve over ice. Express an orange peel on top by twisting the rind over the glass to release the citrus oils. Garnish with orange swath and sage leaves.
Note: Chamomile tea concentrate is a 2:1 ratio of steeped tea to water.
Spiced honey is equal parts honey and spices steeped together. The spices used are sage, cardamom and black pepper.

- 1.5 ounce J. Henry bourbon
- .5 ounce allspice dram (such as St. Elizabeth)
- .25 ounce fresh lemon juice
- .5 ounce cinnamon syrup (see below)
- 1 egg white
- 1/4 cup heavy cream
Dry shake all ingredients except heavy cream. Add ice. Shake again. Double strain into a Coupe glass.
Float lightly hand-whipped heavy cream on top by pouring slowly at the edge of the glass.
Spiced cinnamon syrup
- 4 cups of water
- 1/4 cup honey
- 3 cinnamon sticks
- 1 piece star anise
- 3 pieces fresh ginger
- 1 tablespoon freshly grated nutmeg
Bring all ingredients to a boil and simmer until thick.

- 2 ounces homemade cranberry juice (see recipe)
- 1 ounce blood orange rosemary syrup (see recipe)
- Soda water
Build in a rocks glass with crushed ice. Top with soda water. Garnish with candied blood orange peel and a rosemary sprig.
Homemade cranberry juice
- 2 cups white cranberry juice
- 1 cup fresh cranberries
Bring ingredients to a boil and simmer for 15 minutes. Blend until smooth.
Blood orange rosemary syrup
- 3 cups water
- Peel from 3 oranges
- 4 sprigs fresh rosemary
- 1/4 cup brown sugar
Bring all ingredients to a boil and simmer until thick.

- 1.75 ounces Tito’s Vodka
- 1.5 ounces cranberry juice
- 1.5 ounces club soda
- 2 ounces Barritt’s Ginger Beer
- .5 ounce lime juice
Build all ingredients in a glass over ice. Serve in straight-side pint glass, garnished with a lime wedge.

Makes 16 servings
- 16 ounces (2 cups) Plantation 5yr Barbados Rum (or any aged rum)
- 20 ounces (2.5 cups) cranberry syrup (see recipe below)
- 24 ounces (3 cups) ginger tea (see below)
- 8 ounces (1 cup) fresh lemon juice
- 1 bottle Francois Montand Champagne (or any dry sparkling wine)
- Orange wheels and fresh cranberries for garnish
Combine ingredients and keep chilled. Serve on ice with an orange wheel and fresh cranberries.

- 32 ounces (4 cups) ginger tea (see below)
- 20 ounces (2.5 cups) cranberry syrup (see recipe)
- 8 ounces (1 cup) lemon juice
- 32 ounces (4 cups) soda water
Combine ingredients and keep chilled. Serve on ice, with an orange wheel and fresh cranberries for garnish.
Cranberry Syrup
- 2 cinnamon sticks
- Orange peel from 2 two oranges
- 12 ounce bag of fresh or frozen cranberries
- 20 ounces (2.5 cups) water
- 16 ounces (2 cups) white sugar
- 4 ounces ( 1/2 cup) brown sugar
Combine ingredients in a pot. Bring to a boil and then turn temperature down to simmer. Stir every few minutes. Once the cranberries start popping (the skin will split), leave on the stove for another 10 minutes. Remove from heat and let cool for 20 minutes. Then strain. (Frozen cranberries will take longer to bring to a boil.)
Ginger tea
- 2 bags or two tablespoons of good ginger tea, where the only ingredient is dried ginger
- 1 cup hot water
Steep for 5 minutes.

- 2 ounces caramelized pecan bourbon (see note)
- .25 ounce spiced molasses syrup
- 2 dashes Cocktail Kingdom Wormwood Bitters
- 2 dashes Angostura Bitters
- Orange peel
Combine all ingredients in mixing glass. Stir until chilled. Serve over “snowball” (freshly crushed ice packed into a 3″ diameter ball). Serve in a double old fashioned glass and garnish with orange peel.
Note: To make caramelized pecan bourbon, soak pecans in water for 24 hours to remove peel and excess salt. Strain pecans and add them to Elijah Craig bourbon and let them infuse for a minimum of 24 hours.
