One of the easiest soups I make is this creamy, flavorful potato soup. It shows up on our weekly menu rotation a few times during the cold months because it also happens to be a Crock Pot recipe—aka convenient for busy nights!
I’ve made a few different potato soups over the years, and this has become my go-to version when I want something simple, but flavorful. Everything cooks at once, in only a few hours if needed and then it’s blended to a creamy texture perfect for a chilly evening.
